It turns out the DodoRex does NOT heal thousands of hp/sec but 250hp/sec. TLDR; DodoRex heals 250hp/sec, not thousands/sec. -Also an important thing to note is that the DodoRex is extremely powerful not because of it's melee damage (Which is 1260damage at level one) but it's firebreath. The firebreath deals a % of your dinos max hp. TL;DR: if your tamed dodorexes disappear, put them in cryopod and they probably wont disappear after you take them out. I may have found a workaround for the disappearing tamed dodorexes. So we have tamed 2 of them and they haven't disappeared *yet*.
